Hawaiian Pulled Chicken

I love the Epicure Pulled Chicken, made in the crock pot or Instant Pot it makes awesome tacos, salads, sandwiches and more. The last few times I've switched up the recipe and made it Hawaiian style! It's perfect on King's Hawaiian Rolls with Asian Slaw. Cook once, eat twice! Enjoy! Once again this can be made in the Instant Pot or Slow Cooker

HAWAIIAN PULLED CHICKEN

1 Pack Epicure Pulled Chicken
2 1/2 lbs boneless skinless chicken thighs, trimmed of excess fat (you can substitute  boneless skinless chicken breasts or pork)
1/2 c ketchup
4 tbsp soy sauce
1 14 oz can of pineapple tidbits in juice
2 tbsp corn starch
2 tbsp hoisin sauce (optional)

Combine all ingredients in Instant pot or crock pot. IP-Cook on high for 15 minutes, allow to naturally release for 5 minutes then quick release. Shred chicken and enjoy. (Crock pot-cook on high for 3 hours or low for 6.)

Asian Slaw

1 bag coleslaw mix
2-3 green onions sliced thin
1 Tbsp Epicure Sesame Ginger Dressing mix
3 tbsp soy sauce
2 tbsp rice vinegar
1/3 c oil

Toss green onions and cabbage in a bowl. Combine remaining ingredients in a cruet or jar, shaking to combine. Toss with cabbage and onions.

Serve on rolls, in tortillas. Enjoy!
