EASY MEXICAN LASAGNA

I've always loved the way enchiladas taste after they have baked for a while and the tortillas become soft. I developed this recipe because I wanted an easier dish. EPICURE'S Taco seasoning makes the sauce taste so good!, and cooking it in the Multipurpose steamer means your lasagna is ready in 15 minutes! Don't have the steamer? Build it in a casserole and bake in the oven. Enjoy!

EASY MEXICAN LASAGNA

1 lb Lean Ground Beef
1 Envelope EPICURE Taco seasoning
1 14oz can Tomato Sauce
3/4 c. water

12 6" Corn Tortillas
1 14oz can Refried Beans
2 c shredded cheddar cheese

In a small sauce pan cook the ground beef until no longer pink. Add the Taco seasoning, tomato sauce and water. Simmer for 15 minutes. Add salt if needed.

In the Multipurpose steamer or a  9x9 square casserole dish put 1/2 cup of the sauce. Using 4 tortillas, cover the bottom (I cut 3 in half), top with half the refried beans, 3/4 c cheese and 3/4 cup of sauce. Repeat layer, top with remaining tortillas, sauce and cheese. Put lid on steamer and microwave 10 minutes. Remove lid and microwave 10 minutes more. Allow to rest 5 minutes before serving. If cooking in the oven bake at 350 degrees for 30-40 minutes. Enjoy!

Let your imagination go with this recipe. Add sauteed peppers and onions, make it a meatless meal using canned lentils instead of ground beef. Use shredded chicken. Top with guacamole and sour cream.
