It's a cold rainy early spring day here in Michigan. The kind of day you just want to stay inside. A good day to get the laundry done. And bake. In my year long search of the "perfect" apple oatmeal bar/cookie/muffin, I think I've come pretty close. And it's gluten free to boot!
If you want a real treat, serve them warm with a scoop of vanilla ice cream and a drizzle of caramel.
Apple Spice Oat Bars
2 1/2 cups oats, divided
1/2 c. coconut sugar (or brown sugar)
2 tsp Epicure Apple Pie Spice
1/2 tsp. salt
1 tsp. baking powder
1 large egg
1 c unsweetened almond milk (or any milk)
1 tsp vanilla
1/2 c unsweetened apple sauce
1 c. diced apple (leave the peels on)
Preheat oven to 375 degrees.
Line an 8x8 baking pan with parchment paper, leaving a large enough edge to pull them out of the pan. Spray with non stick spray.
In a food processor or blender pulverize 1 1/2 cups of the oats until the consistency of corn meal. In a large bowl combine all the dry ingredients, then add all the wet ingredients. Stir until fully combined. Fold in the apple. Pour into the baking pan, smooting out the top. Bake for 45 minutes or until the top springs back. Allow to cool in the pan about twenty minutes, remove from pan and finish cooling. Cut into 12 bars. Store in an airtight container.
