We eat a lot of green beans in this house. At least once a week. I steam them, saute them, even braise them. Asian, Italian, Frenched, Southern, green beans can be made so many ways. Tonight's inspiration came from a popular high end steak house recipe. A friend mentioned them to me, I checked out the recipe and thought it had too many steps and ingredients for a simple side dish. What I did have in the house were the basics for what turned out to be a fantastic side. Enjoy!
GINGER SHALLOT GREEN BEANS
1 lb. green beans, trimmed and blanched to crisp tender
1 cup halved grape tomatoes
1 shallot finely diced
2 tablespoons minced ginger
1 teaspoon minced garlic
4 tablespoons butter, divided
1/2 teaspoon lemon zest
1 tablespoon lemon juice
salt and pepper to taste
In a saute pan melt 3 tablespoons of butter over low heat. Add shallots, ginger and garlic and cook for about 10 minutes, until translucent. Turn heat to high and add green beans and tomatoes, saute for about 3 minutes, add the final tablespoon of butter, lemon zest and juice. Toss to coat, add salt and pepper to taste. Enjoy!
