Amazing Asian Inspired Sides

In our quest to eat healthy, seared Ahi Tuna is often on the menu. I tend to prepare it in an Asian style, so of course I want an Asian inspired side. Chinese style green beans are a favorite, as is anything made with cucumbers. Here are two recipes that I made tonight.

Spicy Asian Counter Top Pickles

I call these counter top pickles because after sitting on the counter for half an hour they are perfectly "pickled" and ready to eat. A great side for any Asian inspired grilled seafood or meat.

2 cups peeled and thinly sliced cucumbers
2 tsp. grated fresh ginger or 1 tbsp. julienned pickled ginger
1/3 cup rice wine vinegar
1 tbsp. sugar
1 tsp. salt
1-2 tsp Sriracha chili sauce

Mix all ingredients until well combined. Allow to "pickle" on the counter for 1/2 to 1 hour, while you prepare the rest of your dinner. Enjoy!

Spicy Chinese Style Green Beans
There are recipes for these all over the internet. Here is my version, but all of them are good!

1 lb. of fresh green beans, cleaned and trimmed
2 tbsp. cooking oil
1 tbsp. minced garlic
1 tbsp. minced ginger
1/4 c. dry sherry
3 tbsp. lite soy sauce
1/2 c. asian ginger dressing or marinade (pick a brand you like)
1 tsp sriracha chili sauce (if desired for spice)

Heat a saute pan or wok over high heat, add the cooking oil and just as it begins to smoke add the green beans. saute them quickly until they begin to blister. Add the ginger and garlic and then the sherry (be careful it doesn't flame). saute for a few minutes, then add the soy, asian ginger dressing/marinade and the Sriracha. Stir fry over high heat until beans are cooked crisp tender and sauce is just beginning to caramelize. Serve with seared Ahi Tuna, glazing the tuna with the bean sauce. Enjoy!
