Sicilian Baked Chicken Breast

"What's for dinner tonight?"  Beef braciole I say, he says "huh". I say that's not what you want. He says "that's fine". I know better.  What to do, what do I have? In the freezer, boneless skinless chicken breasts. Can I make them work? I think so, let me give them a try. Very good, very tasty, perfect for when you forget to pull the chicken from the freezer.

Sicilian Baked Chicken Breasts

4 boneless skinless chicken breasts, frozen
2 T olive oil
2 T butter, melted
1 tsp minced garlic
2 T grated Parmesan cheese
2 T seasoned Italian breadcrumbs

Oven at 375 degrees

Combine the butter, oil and garlic. Spray a rimmed baking sheet with cooking spray. Brush the oil mixture over the chicken on both sides. place on the baking sheet. Sprinkle with salt and pepper. Combine the cheese and breadcrumbs and sprinkle over the chicken. Drizzle any left over oil mixture over the coated chicken. Bake for about 45 minutes, or until the chicken is cooked through. Enjoy
