My friend Lisa brought this Pumpkin Torte to dinner last week, and everyone raved. Since she shared the recipe that she got from her friend Julie with me, I thought I would share it with all of you, just in case you need one more dessert for the holiday! Try it, it's awesome.
Pumpkin Torte
1 box yellow cake mix (set aside 1 cup)
3 eggs
3/4 c. margarine or butter, softened
1 large can pumpkin
3/4 c + 1/4c brown sugar
2 tsp. Epicure Apple Pie Spice
3/4 c milk
1 c sugar
1/4 c. chopped pecans
Oven at 350 degrees.
Layer 1: Grease a 9x13 baking dish. In a bowl combine cake mix (don't forget to set aside 1 cup of dry mix), 1/2 c. softened margarine and one egg. Press into the bottom of prepared 13x9 pan. (Tip: Floured hands make it easier to spread.)
Layer 2: Combine pumpkin, 3/4 c. brown sugar, 1 tsp. cinnamon, 2 eggs and milk. Mix until smooth, pour over the cake mix layer.
Layer 3: Combine 1 c cake mix, 1 c. sugar, 1/4 c. brown sugar, 1 tsp. cinnamon, 1/4 c. melted margarine and pecans. mix until crumbly and sprinkle on top of pumpkin layer.
Bake @ 350 degrees for 45-50 minutes. Serve with ice cream or cool whip. Enjoy! Happy Holidays!
