Penne with Sausage and Peppers

I made this dish for a friend. I wanted something that was easy to prep for me and easy to serve for her.  The sausage, peppers and sauce roast in the oven in one pan. I boiled the pasta, added it to the sauce and dinner for 8 was ready! Try this for your next pot luck, or make it up and have it ready for the family to scoop and eat when they are on the run. This one is definitely a keeper!

Penne with Sausage and Peppers

2 lbs. Italian Sausage Links (sweet or hot, your preference)
2 tbsp olive oil
2 bags of frozen sliced peppers and onion blend
1 28oz. can of diced tomatoes
1 28oz. can Italian tomato sauce
2 tsp Italian seasoning
2 tsp minced garlic
2 tsp salt
1/2 tsp pepper
1 lb of penne, cooked to al dente
1/3 c. grated parmesan cheese

Oven at 350 degrees. Heat a heavy bottomed roasting pan on top of the stove. Add the olive oil and brown the sausages quickly. Cut each sausage into thirds. Add the pepper and onion blend, diced tomatoes, tomato sauce, Italian seasoning, garlic, salt and pepper.  Stir to combine. Put in the oven and roast for 1 hour. Remove from oven, add the penne, stir to combine. Top with the grated parmesan. Done. Enjoy!
