Bacon Wrapped BBQ Shrimp

Two things that really go well together are shrimp and bacon. In my mind there isn't a better combination, especially when the shrimp is wrapped in the bacon and it is slowly cooked to allow the bacon to crisp. Just perfect! I coat the shrimp with a rib rub, use your favorite commercial brand or one you make yourself. Also, a grill basket is great, but you can skewer the shrimp too. Either way, enjoy!

Bacon Wrapped BBQ Shrimp

1 1/2 lbs. of raw peeled and deveined shrimp, 16-20 ct, thawed if frozen
1 1b smoked bacon, thin sliced, cut in half
1 tbsp Rib Rub
1/2 - 3/4 c BBQ Sauce (I like Montgomery Inn)

Place shrimp in a bowl and blot dry. Add the rib rub and toss together to coat. If using skewers, soak in water for 30 minutes. Wrap each shrimp in a slice of bacon, overlapping it to cover the shrimp completely. Repeat until all shrimp are covered. Brush BBQ sauce on each side. Place shrimp in a grill basket that has been sprayed with non stick spray or skewer the shrimp. Preheat a grill to medium heat. Place the shrimp on the grill and cook slowly (lower heat if necessary), so allow the bacon to crisp as the shrimp cooks. Brush with more BBQ sauce if desired. Enjoy hot off the grill or at room temp. Enjoy!
