There are lots of Parmesan topped fish recipes out there, many using heavy rich mayonnaise as their base. Here is one that we had for dinner last night, and realized we could eat this quite often. Served with a simple side of steamed broccoli, we had a healthy satisfying meal.
Parmesan Crusted Cod
Two Cod Fillets 6-8 ounces each (Tilapia, Flounder, Walley or Whitefish would also be good)
1/4 c. Italian Seasoned Dry Breadcrumbs
1/4 c. grated parmesan cheese
2 T 0live oil
Preheat oven to 375 degrees.
Line a baking dish with aluminum foil and coat with non stick cooking spray. Place the fillets on the dish. In a separate bowl combine the breadcrumbs, cheese and olive oil until crumbly. Coat the fish with this mixture and bake for about 15 minutes, or until fish flakes easily. Serve with lemon wedges. Enjoy!
