Pasties (Cornish Meat Pies)

Pasties 

I made Pasties a few days ago, mainly for Bob's cousin, but they also made their way around the neighborhood. The compliments made me realize that people really like these little meat pies (I thought I was one of the only ones who did!), and they are incredibly easy to make. You can make your own pie crust, but I have been using pre-made crusts from the grocery. My favorite is the Meijer brand. The crust is always delicate and flaky. So here we go. Simple ingredients, a little time, and you'll have warm and savory hand pies before you know it!

1 lb. ground beef, 85/15 (lean to fat ratio)
1 onion, diced 1/4"
1 large potato diced 1/4" (about 1 cup)
1 egg
1/2 tsp minced garlic
1 tsp salt
1/2 tsp freshly ground pepper
2 pkgs pre made pie crust (4 crusts) OR your favorite pie crust

Oven at 350 degrees. With your hands toss together the meat, onion, potato, egg, garlic, salt and pepper. To check for seasoning, fry up a tablespoon of the mixture and taste it. Adjust as necessary. Unroll the pie crust and place on a lightly floured board, flatten it a bit with a rolling pin. Using a bowl or anything round, fit four circles on the dough and cut them out. Place about 3 tbsp of meat mixture on one side of each circle, moisten the edge with some water and fold over. crimp the edges together by folding over or pressing with a fork. Place the pies on a baking sheet lined with parchment paper. Cut a 1/2 " slit in the top of each pie. Bake for approximately 30 minutes, or until golden brown. Enjoy!

This recipe makes about 16 hand pies, depending on how big you cut them. The pies can be frozen before baking. Add about ten minutes to the baking time when starting with frozen pies.
